AHM hires Miguel Rocha Vieira and Pierre-Olivier Petit to manage F&B

Chefs Miguel Rocha Vieira and Pierre-Olivier Petit are the latest investments from AHM – Ace Hospitality Management, for the F&B management of the eight hotel units of Mercan Group in Portugal.

In this way, professionals will be responsible for developing, implementing, and coordinating F&B concepts in ten restaurants, five bars, and two rooftops. The objective is to “create different gastronomic brands and identities, focusing on quality, innovation and Portugueseness”, as the hotel management company explains in a statement: “We want to counter the prevailing idea that hotel restaurants and bars are formal, expensive, and exclusive places for guests or an international audience. We intend to break this barrier, creating a personalized offer for each region, closer to Portuguese culture, the Portuguese public, and local suppliers, providing unique restaurant experiences, whose concepts can range from fine dining to a coffee shop, including a pizzeria”, says Mariano Faz, CEO of AHM, in a press release.

With extensive national and international experience, Miguel Rocha Vieira and Pierre-Olivier Petit will now work together for the first time. Pierre-Olivier Petit will be responsible for managing the logistics and financial aspects of operations. Miguel Rocha Vieira will be in the kitchens to “guarantee the quality of the product and the monitoring of the teams, made up of 250 employees”. In the first phase, starting in March, the chef duo will intervene in the restaurants of Casa da Companhia, Arts Hotel, Sé Catedral Hotel, and Fontinha Hotel, all in Porto.

The action will extend to the rooftop, bar, and restaurant of the Renaissance Porto Lapa Hotel, also in Porto, and the rooftop of the Hilton Garden Inn, in Évora. Three hotel units will be opened throughout 2024 in Porto, Évora, and Beja, representing an investment of 54.6 million euros by the Mercan Group, of which AHM is part.
